Sorry I haven't posted in awhile, it's been a long week.
Here are a few things to do with Thanksgiving leftovers! {All recipes at bottom}
1. A classic turkey sandwich. MMMMMM! Lettuce, juicy tomato... *sigh* Reminds me of my childhood. :)
2. Thanksgiving casserole. We did this one year, and it was really good.
3. Turkey omelet.
4. Hot turkey sandwich- probably one of my favorites!!

Classic Turkey Sandwich.
Ingredients: Turkey, tomato, lettuce, bread, and mayo/miracle whip.
Directions: Assemble sandwich.

Thanksgiving Casserole.
Ingredients: Green bean casserole, stuffing, gravy, mashed potatoes and turkey.
Directions: In the bottom of a brownie pan (well, that's what we call it, lol!), spread mashed potatoes, next, add even layer of green bean casserole, next, even layer of shredded turkey, and then the stuffing on top. Drizzle gravy on top of casserole, then bake at 375 for about 10 - 15 minutes. Serve with a side of cranberry sauce if desired.

Turkey Omelet.
Ingredients: green bean casserole, cheese, turkey, eggs, and milk.
Directions: Crack 2 eggs in a bowl and add a tablespoon of milk. Mix together well.
Butter your frying pan and add egg mixture.
Prepare your cheese, shred your turkey, and get out the green beans.
When one side of the omelet is finished cooking, flip.
Add the cheese, turkey, and green beans to one side of the omelet.
Flip the other half of the omelet on top of the filling, and move onto plate.
Add a sprinkling of salt, serve with mashed potatoes if desired.

Hot Turkey Sandwich.
Ingredients: Bread, mashed potatoes, turkey, gravy.
Directions: On a plate, put down a piece of your choice of bread. Next, spread hot mashed potatoes on bread, then layer hot turkey. Cover in gravy, and add another piece of bread on top. {So not healthy, but so delicious!)
Alternative: Layer bread on the bottom of a "brownie" or casserole pan, spread mashed potatoes all over, then the shredded turkey, and cover the top with pieces of bread. Cover the Hot Turkey Sandwich Casserole in gravy, bake in the oven at 375 for 10 - 15 minutes, and serve.
